I made this change a few days ago when I left my original comment and it looks like the Health app still tracks my sleep just fine, but the Sleep focus gets turned off by a time parameter, rather the Wake Up Alarm being dismissed. From there, you can toggle Wake Up Alarm to Off, tap done, and then go back to your Clocks app to set an alarm(s) for your desired wake up time. If you tap that, you can edit each schedule. The 2nd card listed should be Full Schedule & Options. Or, if you're in Health, go to the Sleep section, and scroll to Your Schedule.
